Cheating on Winter Pea Soup - FFwD



This French Friday's with Dorie was a very easy soup to make, and that had me a little worried.  Generally, I enjoy a soup that takes some time to come together.

I started off by sauteing some bacon for the garnish.  Then, because it was there,  I sauteed onion in the bacon fat.  I added chicken broth and frozen peas.  I added romaine lettuce that I had chopped in order to avoid any immersion blender issues.  I should say right now that I really enjoy my immersion blender, hard working, fast and easy to clean.  When I read in P&Q section for the recipe that the lettuce was causing issues frankly I was surprised because usually lettuce is so well behaved.  But to assure that everyone continued to work well together, I veered away from sliced lettuce toward chopped lettuce.  Everything simmered happily away.





Then I pureed it, seasoned it with S&P and served it.  So I should have payed more attention to the P&Q section and used less liquid.  This was a bright green soup, I think that the color is dependent on the influence of the the broth.  I kept on thinking about Wicked, the musical.  My soup could have been used for the Green Elixir. 

My husband liked it.  It is fun to come in from the freezing cold to a nice, bright, bowl of soup.  I thought that it was too thin and will use less broth next time.

  1. I added more peas, and the arugula. But it is a good, not to mention fast, bowl of soup. Nice pic!

  2. Yeah, more peas would have been nice...my garnishes kept sinking :/ Love that top photo...so pretty!

    This was a nice, fast soup and I am guessing it will take nicely to being played around with.
    Man, I wish I had some bacon with mine... That, looks good!

  4. Dorie seems to like thin soup. She always says 6 cups and I go with 4 and add a little if it is too thick. Glad you enjoyed the soup.

  5. I was worried about the lettuce and the immersion blender (which I also love) so I went with the blender. I think your right about the broth making a difference in the soup. I used bouillon which made the pea flavor shine through! Nice picture!

  7. I started with less broth than was called for, because I could see how this could turn into a thin soup! Yours still looks pretty good though! Nice job!

  9. I think Diane is right, Dorie's soups are often thin. I used just 1 quart of broth and it had the consistency I like it. I thought this was quite good for something so easy. Like you, I'm used to putting a bit more effort into even easy soups. Have a warm weekend! I don't know about you, but snow is coming our way again.

  10. I was concerned about using my immersion blender so I just used the stand blender. The soup was very good and very easy. Have a good weekend.

  11. I keep a jar of bacon fat in the fridge 9 (at all times) and it never even crossed my mind to cook the onions in it but I bet that added a nice element to the soup. Darn.

  12. I wish I had used less liquid in the soup, too. However, today when I reheated it for lunch it had thickened quite a bit! I really enjoyed the flavor of this soup! Very fresh tasting! Very pretty presentation.

  13. I think after making a few of Dorie's soups a lot of us use less liquid as she seems to prefer hers thinner. I guess I don't even pay attention to the amount of broth in the cookbook and just use a box or less if I have one open in the fridge. Your soup looks beautiful and I am sure cooking the onion in the bacon fat made it so very delicious.

  14. I had no trouble with my immersion blender, either, but I guess it only takes one incident, so it was a good idea to chop it rather than slice it. Love the colour of your soup and frying the onion in bacon fat would make it just that much better.

  15. So sorry for the late comment. Nana and I had too much fun traipsing around to see the Barefoot Contessa and I ended up coming down with a miserable cold --- Good thing I had all this fabulous soup to enjoy:) Wasn't this a quick and easy delight ? I will definitely not strain it next time as we enjoy a little thickness to our soups. But there will be a next time !!!
