I guess I don't even pay attention to the amount of broth in the cookbook and just use a box or less if I have one open in the fridge. I used just 1 quart of broth and it had the consistency I like it. I thought this was quite good for something so easy. Like you, I'm used to putting a bit more effort into even easy soups.
